Black Bean Soup
1 1/2 cups black beans, soak over nite and drain. In large pot/dutch oven bring to a boil and simmer for a couple of hours with taco spices, to taste.
lots of onions
1/4 to 1/2 lb of bacon cuts small, raw
1 tsp or less crushed chilies, dried
2 tsp prepared mustard
1 tsp or less minced garlic
salt, pepper and parsley to taste
Simmer forever as it takes quite a while for the beans to soften. If you don't like it too spicy, easy on the crushed chilies.
Then you can add when serving it, the rice, fresh chopped onions, tomatoes, cilantro, and cheese (parmesan, here in Canada)
